Serve this jam with homemade Halo Halo Waffles!

Add coconut milk to a small pot. Bring to a boil over high heat.

Once coconut milk starts to boil, add sugar and stir until it is completely dissolved.

Add grated purple yam and stir to combine. Continue cooking over medium low heat for 30 minutes until the mixture thickens. Stir the yam periodically.

Transfer to a bowl and cool at room temperature. Enjoy by itself or serve as a jam over bread or waffles!
