6 Ripe Bananas Quartered (1/4 banana per spring roll)
24 Spring Roll Wrappers
6 teaspoons Sugar 1/4 teaspoon per spring roll
1 cup Water For sealing spring rolls
Vegetable Oil For Frying

Slice bananas in half widthwise then again lengthwise. Each banana should be cut into 4 slices now.

Lay one spring roll wrapper flat on a clean working surface with a corner pointed towards you. Placing the wrapper in this angle makes it easier to wrap and fold later.

Place a slice of banana on the wrapper in the corner that's towards you. The banana should not be sticking out of the wrapper.

Sprinkle with 1/4 teaspoon sugar.

Roll bottom corner of wrapper over banana, covering it completely. Continue rolling to the top of the wrapper. Fold left and right corners inwards. Dip finger in water and wet these corners to seal the wrapper. Repeat with each spring roll.

In a large pan over medium high heat, heat oil. Carefully place spring rolls in pan to fry. Do not overcrowd so work in batches. Flip once or twice until spring rolls are golden and crispy. Enjoy hot!
