4 cups Cold Water
1 cup Taro Root Cut into 1-inch cubes
1 cup Purple Yam Cut into 1-inch cubes
4-8 ounces Rock Sugar Adjust to your preference of sweetness
1/2 cup Tapioca Pearls
1 can (13.5 ounces) Coconut Milk

It tastes as good as it looks and sounds! This Taro Tapioca Pearl is a classic Chinese dessert that can be served hot or cold. In my recipe, I’m adding purple yam to give it natural sweetness and the lovely purple hue. Growing up, this was one of my favorite desserts and I’m excited to share it with you!

Boil the water. Add the taro, purple yam and rock sugar to the boiling water. Cook for 10 minutes or until the taro and yam become soft.

Add the tapioca pearls and coconut milk. Cook for another 5-10 minutes or until the tapioca pearls become translucent. Stir frequently so the tapioca do not clump. Add more rock sugar to adjust to your liking. Enjoy!
