Steps

1
Done

Cook glutinous rice according to package instructions. You may cook in a pot over the stove or in a rice cooker, usually for about 20 minutes in a pot. Do not overcook as you will continue to cook rice in the pan with rest of ingredients. Turn off heat when finished cooking.

2
Done

In a small bowl, mix chicken broth (see homemade recipe), oyster sauce, light soy sauce, dark soy sauce, sesame oil and Chinkiang vinegar until well combined. Set aside.

3
Done

Heat vegetable oil in large pan over medium heat. Add the mushrooms, Chinese sausage and onion, stir frying for 2 minutes. Add Shaoxing wine, continuing to stir fry for additional 2 minutes. Onions should brown.

4
Done

Add the cooked rice to the large pan and mix well with rest of ingredients. Add half of the sauce, mix well with rice, then add rest of sauce, mixing until rice is brown in color from the sauce. Toss in scallions and serve in a bowl. Enjoy!
