Ingredients

Adjust Servings:
4 teaspoons Cornstarch
4 teaspoons Soy Sauce
2 teaspoons Sugar
1 tablespoon Sesame Oil
2 cloves Garlic Minced
2 teaspoons Ginger Minced
4 stalks Scallion Minced, white part only
1 tablespoon Black Bean Sauce
1 tablespoon Szechuan Chili Sauce
1 pound Ground Pork
2 tablespoons Chili Bean Sauce
1 pound Silken Tofu Drained and cut into 1/2 inch cubes

    Delicate and hearty all at the same time! Mapo tofu is a popular Chinese dish from the Sichuan province. Sichuan province is known for their spicy food, and this dish does not disappoint. The tofu is typically cooked in a spicy chili and black bean sauce with minced meat, usually pork or beef.

    Add the cornstarch, soy sauce and sugar to a small bowl and stir to combine. Set aside.

    Heat a large frying pan over medium high heat until hot. Add the sesame oil, garlic, ginger and green onions and stir-fry with a spatula until fragrant. Add the black bean sauce and Sichuan chili sauce and continue stir-frying.

    Add the ground pork or beef and use the spatula to break it up into small pieces (so they do not clump). When the meat is cooked, add the chili bean sauce and stir.

    Add the tofu and toss to mix. (If you stir it, the tofu will lose its shape.)

    Pour the cornstarch mixture over the tofu and toss to distribute evenly. Serve the tofu and meat over a bed of rice.
