Sesame paste or tahini is used to cook many dishes in Asia or the Middle East. When the sesame seeds are toasted, it gives the sesame paste a nutty and rich flavor. When added to savory foods, it adds some subtle sweetness, which I absolutely love. Make this at home easily if you cannot find it at your local supermarket.

In a large pan over medium heat, toast sesame seeds (without oil) for about 6-8 minutes until browned and fragrant. Remove from heat and cool completely.

In a food processor, grind toasted sesame seeds until it becomes powdery, about 30 seconds. Add 2 tablespoons at a time and continue blending until the powder turns into a paste. Use immediately or refrigerate for later use.
