Red beans or adzuki beans are a great source of essential nutrients, vitamins and minerals. They’re loaded with protein, fiber, manganese, potassium, magnesium, zinc, iron, thiamin, vitamin B6, calcium and more. Insoluble fiber found mainly in their skins promotes digestive health and bowel regularity. They’re also a low-fat, cholesterol-free source of protein. Red bean ice cream is a great way to enjoy these protein-rich legumes!

Make red bean paste by filling a medium pot with the red beans and water. Bring to a boil over high heat, then simmer over low heat for 2 hours until beans are soft when crushed between your fingers. Mash the beans in the pot then add honey and stir to combine until a paste forms.


In a small bowl, stir to combine 2 tablespoons whole milk and rice flour.


In a medium bowl, mix together remaining milk, heavy cream and coconut milk. Bring this mixture to a boil over medium high heat, then add the flour mixture and stir to combine until it thickens (about 1 minute). Pour mixture into a bowl or pan and place it over an ice bath for 20 minutes.


After the mixture has cooled, combine it with the red bean paste in a blender then pour into an ice cream maker. Let it churn for 25 minutes then refrigerate for a few hours before serving.
