1/4 cup Sugar
1 teaspoon Matcha Green Tea Powder
3/4 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 Egg
1 tablespoon Unsalted Butter
1/2 cup Half and Half
1 teaspoon Vanilla Extract
Glaze
1/4 cup Confectioners Sugar
1 teaspoon Matcha Green Tea Powder
1/8 cup Boiling Water

Matcha is a powdered green tea made from high grade tea leaves of a specific variety. Green tea in general is typically made by seeping leaves into hot water then discarding the leaves, but matcha powder is traditionally mixed with and dissolved in hot water so you’re ingesting the entire leaf. Matcha also has a higher antioxidant content and more caffeine than green tea and is popularly used in many desserts for its rich, thick flavor and aesthetics.

Preheat oven to 375 degrees.

In a large mixing bowl, whisk together the dry ingredients: flour, sugar, matcha green tea powder, baking powder and baking soda. In a separate medium bowl, whisk together the wet ingredients: egg, butter, half and half, and vanilla extract until smooth. Mix the wet and dry ingredients together until a batter forms.

Fill a donut pan with the batter - only fill halfway since it will rise when baking in the oven. Bake for 5 minutes if making mini doughnuts or 8-10 minutes if making regular-sized doughnuts. They're ready if you stick a knife through it and the batter does not stick to the knife when you pull it back out (it is dry). Remove from oven and cool on a rack before adding frosting or glaze.

Make the glaze by whisking sugar, matcha green tea powder and boiling water in a medium bowl until smooth. Dip the top of the doughnuts one by one into the glaze and set on a serving plate. Enjoy!
