Korean Cheesy Corn is one of my favorite Banchan, or Korean side dishes. It is typically served along with kimchi and other side dishes that accompany rice. I particularly love this Banchan because it is served hot, unlike most of the others. This recipe takes 15 minutes and will surely be a crowd-pleaser.

Preheat oven to broil and place a small or medium cast-iron skillet in the oven.

In a medium pan over medium high heat, add the butter and stir around for 10-20 seconds until fully melted. Add the corn, cooking for 1 minute. Then add the garlic, mayonnaise, half of the scallions and half of the mozzarella cheese. Cook until the cheese is melted.

Using a mitten to handle the cast iron skillet (very hot!), transfer the corn from the pan to the cast iron skillet. Sprinkle the remaining cheese on top and broil in oven for 2 minutes.

Remove skillet from oven and garnish with remaining scallions and the Korean red pepper powder. Enjoy!
