2 tablespoons Dried Shrimp
1 tablespoon Sugar
1 1/4 Lime Juice only
2 cloves Garlic Minced
2 tablespoons Fish Sauce
1 Thai bird chili Thinly sliced
Salad
1 Green Papaya Peeled, seeded and grated to thin strips
1 Plum Tomato Thinly sliced
2 tablespoons Peanuts

Simple to make and refreshing in taste! Green papaya tastes nothing like the orange colored papaya that we usually see at our local supermarkets. They’re a little harder or crunchier in texture, making it a great snack to munch on by itself too. I might add that this salad is also great for any low-calorie diet!

In a large bowl, mix together dressing ingredients (small dried shrimp, sugar, lime juice, garlic, fish sauce and Thai bird chili) and crush them with the back of a spoon to release flavors.

Add the salad ingredients (green papaya, plum tomato and peanuts) and toss to mix. Enjoy!
