1 tablespoon Vegetable Oil
2 cloves Garlic Thinly sliced
1-inch piece Ginger Thinly sliced
1 Jalapeno Pepper Thinly sliced
2 tablespoons Black Bean Sauce
4 tablespoons Oyster Sauce
1 tablespoon All Purpose Flour
1 teaspoon Sugar
6 tablespoons Water
1 stalk Scallion Thinly sliced, green part only

Inspired by my mother’s homemade recipe, this traditional Chinese dish is regularly served at most dine-in restaurants. The dish doesn’t require much preparation so you can easily throw it all together in less than 10 minutes after cleaning the clams.

Clean clams (see tips for how to properly clean clams).

In a large pan, heat vegetable oil over medium high heat. Add garlic, ginger and jalapeno pepper and stir-fry for 30 seconds until golden but not burnt. Turn heat to medium and add black bean sauce. Stir for 30 seconds more to combine.

Add clams to pan and toss to combine with sauce. Cover with lid and cook until clams open up, about 5 minutes.

In a separate small bowl, whisk together oyster sauce, flour, sugar and water. When clams are fully cooked (they're open), add this oyster sauce mixture and toss to combine. Immediately turn off heat. Serve on a plate and garnish with scallions. Enjoy!
