3 pounds Chicken Thighs Boneless, skinless
Sauce (for pressure cooker)
1 3/4 cup Chicken Broth
2 cloves Garlic Minced
2 tablespoons Soy Sauce Low-sodium
2 tablespoons Hoisin Sauce
1 tablespoon Chili Garlic Paste
1 tablespoon Brown Sugar
Sauce (for broiling in oven)
1/2 cup Honey
1/2 cup Soy Sauce Low-sodium
3 tablespoons Chili Garlic Paste
2 tablespoons Hoisin Sauce
2 tablespoons Sesame Oil
1/2 tablespoon Brown Sugar
Garnish
Scallions Minced
Kitchen Supplies

    Make the sauce for cooking in pressure cooker

    In a small bowl, mix together the chicken stock, garlic, soy sauce, hoisin sauce, chili garlic paste and brown sugar.

    Cook the chicken in pressure cooker

    Wash the chicken thighs, then pat dry. Place the thighs in the pressure cooker and pour sauce over it.

    Close and lock the lid. Make sure the steam release handle on top of lid is in the "Sealing" position. Press the "Manual" button then the "Pressure" button, setting it at "High". Set timer to "10 minutes".

    Make the sauce for broiling chicken in oven

    In a small saucepan over medium heat, add the ingredients for the "broiling" sauce and bring to a boil. Reduce heat to medium low and cook until slightly thickened, about 10-12 minutes.

    Preheat oven to Broil

    When the chicken has cooked for 10 minutes, move the steam release handle on pressure cooker lid to "Venting".

    Preheat oven to Broil.

    Broil chicken

    Line a baking pan with aluminum foil and place a cooling rack on top.

    Using tongs, remove the chicken thighs from pressure cooker and dip them in the "broiling" sauce. Place on the cooling rack. Broil for 3-4 minutes on each side. Remove from oven then dip the chicken in sauce again. Broil for additional 2 minutes then remove from oven.

    Garnish with scallions and serve over a bed of rice. Enjoy!
