2 pounds Pork Bones
Size of thumb Ginger Sliced into 3 pieces then smashed
2 tablespoons Shaoxing Cooking Wine
1 small Onion Halved
4 stalks Scallions Halved
16 cups Water

Simple pork broth (stock) made from simmering pork bones without preservatives, additives or salt - a healthier alternative to store-bought pork stock. Recipe makes 13 cups of broth.

Wash bones and prepare ingredients.

Add all ingredients (pork bones, ginger, shaoxing cooking wine, onion, scallions and water) to a large stockpot and cover. Bring to a boil over high heat, stirring frequently so the bones do not stick to the bottom of the pot. Skim foam or any impurities that float to the top of the broth.

Turn heat to medium low, cover and simmer for 2 hours. Periodically, skim foam or any impurities that float to the top of the broth.

After simmering, remove all ingredients (ginger, onion, bones and scallions) by draining the stock. Use pork broth immediately for another recipe or store in refrigerator for up to 2 weeks or freezer for up to 3 months.

Discard all the hard ingredients. You may eat the meat off the bones.
