1/2 teaspoon Vanilla Extract

Recipe for Sesame Butter – Simply grind 1/2 cup of white sesame seeds in a food processor on low speed for about 5 minutes or until the seeds turn into a powder-like form with a buttery consistency (see photo as reference).

Preheat oven to 375 degrees. Grease a baking pan with butter.

In a small bowl, whisk together the flour, baking powder and salt. Set aside.

In a medium mixing bowl, whisk together the peanut butter, sesame butter, white sugar and brown sugar using an electric hand mixer on low speed until well combined. At this point, there should be small lumps of the mixture. Add egg and vanilla extract, continuing to mix for 1 minute until combined. Then add in flour mixture and continue mixing. The dough is ready when you are able to roll it into a ball easily with the palm of your hands.

Roll dough into 1-inch balls then flatten them lightly with the palm of your hands. Do not flatten too much if you want light and fluffy cookies. Place them on the greased baking pan, making sure to spread them all 1-inch apart because they'll spread in the oven.

Bake in the oven on middle rack for 12 minutes. Cookies are ready when they are lightly browned and you stick a toothpick in the center and not much comes out with it. Remove from oven and let them cool at room temperature for 15 minutes before touching. Enjoy!
