4 Soft Shell Crabs
1/2 cup All Purpose Flour Add more if necessary
1 large Egg Beaten; Add more if necessary
1/2 cup Panko Bread Crumbs Add more if necessary
1 cup Vegetable Oil
Dipping Sauce
Ponzu Sauce

Clean soft shell crabs with water and dry with paper towels.

One crab at a time, dredge in all purpose flour until crab is completely covered.

Then dip entire crab into beaten egg until it is completely covered by it.

Finally dredge the crab in the Japanese panko bread crumbs until fully coated. Set aside and repeat steps 2 to 4 with remaining crabs.

Heat vegetable oil over medium heat in a medium pot. When hot in about 1-2 minutes, dip one crab at a time into the oil and deep fry for 60-90 seconds. Crab is ready when it turns red and the crust turns golden brown. Remove crab and place on paper towel to drain oil.

Repeat with remaining crabs. Dip in ponzu sauce and enjoy!
