Clean cod

Clean cod filets and pat dry. Put in a Ziploc bag.

Marinade the cod

Mix the shiro miso, mirin, brown sugar and sesame oil in a small bowl. Pour the marinade into the Ziploc bag with the cod and ensure it is evenly coated. Refrigerate and marinade for at least 1 hour.

Bake

Preheat oven to 400 degrees.

Remove the cods from the Ziploc bag and remove excess marinade by patting with a paper towel. On a baking tray lined with aluminum foil, place the cods and bake for 10-13 minutes (flesh shouldn't be translucent on the inside).

Enjoy

Serve the cod on a plate with thin slices of lemon on top. Press the lemon onto the cod so it absorbs some of the juice. Enjoy!
