1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup Buttermilk Well shaken
1/2 teaspoon Vanilla Extract
4 tablespoons Unsalted Butter Melted
1/2 cup Brown Sugar
1/2 large Egg
2 tablespoons Matcha Green Tea Powder
4 tablespoons Unsalted Butter Room temperature (not melted)
1/2 cup Confectioners Sugar
2 ounces Marshmallow Fluff
1 tablespoon Matcha Green Tea Powder
1/2 teaspoon Vanilla Extract

Two pieces of dark chocolate cake with a matcha green tea filling. Bitterness from dark chocolate perfectly balanced with sweet matcha cream. This recipe makes 2 whoopie pies.

Preheat oven to 350 degrees.

Whisk together all purpose flour, cocoa powder, baking soda and salt in a medium mixing bowl until combined. In a separate small bowl, whisk together buttermilk and vanilla extract. Set aside.


In another large bowl, whisk together butter and brown sugar using an electric hand mixer on medium high speed, about 5 minutes. Add egg and continue whisking until combined.

Reduce speed to low and add 1/3 of flour mixture, whisking to combine. Add 1/2 of buttermilk mixture and continue whisking. Scrape down the sides of the bowl occasionally. Add another 1/3 of flour mixture, whisking to combine, then the remaining buttermilk mixture, continuing to mix. Add final 1/3 of flour mixture and matcha green tea powder. Mix until fully combined.


Spoon 1/4 of the batter onto one corner of a buttered baking pan, forming a mound. Continue with remaining batter, placing them on each corner of the baking pan so that they're all about 2 inches apart.

Bake in oven for about 11-13 minutes until tops are puffed. Transfer to a wire rack to cool completely before adding filling. Meanwhile, make the filling in next step.


Make the filling

In a medium mixing bowl, whisk together the butter and sugar on medium low speed until well combined, about 3 minutes. Add marshmallow fluff, matcha green tea powder and vanilla extract and continue whisking until well combined.

Spoon half the filling onto one cake, completely covering one side. Top with another piece of cake to create a sandwich. Repeat to make second whoopie pie. Enjoy!
