1 stalk Lemongrass Bottom inner, tender layer, thinly sliced
1 or 2 small Red Chilies
1 tablespoon Ground Turmeric
1 tablespoon Fish Sauce
2 teaspoons Ground Ginger
2 teaspoons Palm Sugar
1 teaspoon Coriander Seeds
1/2 teaspoon Ground cumin
2 cloves Garlic Minced
Other
1 tablespoon Vegetable Oil
3 Kaffir Lime Leaves
1/4 Onion Thinly sliced
1 can (13.5 ounces) Coconut Milk
13.5 ounces Water Use can from coconut milk to measure
1 pound Cod Filets Sliced into large pieces
1 cup Jasmine Rice Cooked according to package instructions
1 stalk Scallions Thinly sliced
1 Lime Quartered

    Grind all spice paste ingredients using a food processor. If necessary, pour a little oil to help it along.

    Spice paste ingredients:
    - Lemongrass
    - Red chilies
    - Ground turmeric
    - Fish sauce
    - Ground ginger
    - Palm sugar
    - Coriander seeds
    - Ground cumin
    - Garlic

    Heat vegetable oil in a saucepan over medium high heat. Fry spice paste, kaffir lime leaves and onions for 3 minutes until fragrant, mixing to combine. Add coconut milk and water, then lower heat to a simmer (medium low heat). Add fish and cover pan with lid. Cook for 10 minutes until fish is fully cooked through (center is no longer pink). Transfer fish to a serving bowl.

    Cook jasmine rice according to package instructions. Serve fish with rice in bowls and garnish with scallions and lime wedges.
