Ingredients

Adjust Servings:
1 cup Jasmine Rice Cooked according to package instructions
1 tablespoon Vegetable Oil
2 Eggs Whole
4 cloves Garlic Minced
1/4 Onion Chopped into small pieces
1 cup Kimchi Chopped into small pieces
1 tablespoon Soy Sauce
1 tablespoon Sesame Oil
2 tablespoons Fried Onions

    Cook rice

    Cook jasmine rice according to package instructions and set aside.

    Cook eggs

    Heat a large pan over medium heat. When hot, in about 30 seconds, add 1/4 tablespoon of vegetable oil and cook the eggs sunny side up. Eggs are ready when the egg white "creeps up" and thickens around the yolk. Remove eggs from pan and set aside.

    Toss rice with kimchi

    To the same pan, add the remaining oil (3/4 tablespoon). Add the garlic and onion to the pan and saute for about 1 minute until browned. Add the kimchi, toss for 10 seconds, then add steamed rice. Toss to combine, then add soy sauce, sesame oil and fried onions. After everything is well combined, serve the rice in bowls and top with eggs. Enjoy!
