Waffle Batter
1 large Egg
1/2 tablespoon Sugar
1 cup All Purpose Flour
3/4 cup Whole Milk
1/4 cup Sunflower Oil
2 teaspoons Baking Powder
1/4 teaspoon Vanilla Extract
Toppings (as desired)
Spoonful Ube Halaya Purple Yam Jam (see homemade recipe)
Spoonful Pandan Jelly See homemade recipe
Spoonful Macapuno (shredded coconut) Store-bought or fresh
Spoonful Red Beans Cooked according to package instructions
Spoonful Fresh Pineapple Sliced to small pieces
Drizzle of Condensed Milk

Make Waffles

In a large mixing bowl using a whisk, beat egg until fluffy. Add sugar and continue beating the egg. Add flour, milk, oil, baking powder and vanilla extract, mixing until smooth.

Preheat waffle maker. When hot, pour 1/3 of batter into waffle maker and close lid. Cook until golden brown then transfer waffle to serving plate when ready. Repeat two more times with remaining 2/3 of batter. Makes 3 waffles.

Add toppings

Top waffles with ube halaya (see homemade recipe), pandan jelly (see homemade recipe), macapuno (coconut), red beans, and fresh pineapple slices. Drizzle with condensed milk generously. No need to add syrup or butter. Enjoy!
