2 tablespoons Vegetable Oil
2 large Eggs Beaten
2 cloves Garlic Minced
1/8 medium Onion Diced
3/4 cup Jasmine Rice Cooked
1 cup Crab Meat Sliced into small pieces
2 tablespoons Fish Sauce
1 tablespoon Light Soy Sauce
1 tablespoon Shaoxing Cooking Wine
1 teaspoon Sesame Oil
1 teaspoon Ground White Pepper
2 stalks Scallions Thinly sliced

Heat large skillet over high heat. When hot, add 1 tablespoon vegetable oil then eggs. Scramble the eggs by dabbing it with a spatula into small pieces. When fully cooked, transfer to a small bowl and set aside.

Heat 1 tablespoon vegetable oil in same skillet. Toss garlic in oil for 1 minute until slightly browned and fragrant. Add onion and continue tossing until browned and fragrant, another minute.

Add jasmine rice and toss to combine with garlic and onion. Pan fry for a few minutes then add crab meat, fish sauce, soy sauce, shaoxing wine and sesame oil. When fully combined, return eggs to skillet and add ground white pepper and scallions. Enjoy hot!
