400 ml Whole Milk
3 tablespoons Sugar
1 Egg Egg white only
21 grams Gelatine 3 packets of Knox gelatine

In a medium saucepan over medium heat, combine coconut milk, whole milk and sugar until sugar is completely dissolved. It doesn't need to come to a boil (should take about a few minutes).

Stir in the whisked egg white. Turn off heat immediately, then add the gelatine powder to the pot and stir to combine well with a whisk. It may take about 10 minutes of stirring before the gelatine is completely dissolved. Pour coconut mixture into a deep rectangular dish and chill in refrigerator for at least 3 hours.

When ready, slice pudding into 2-inch cubes and enjoy!

Tip: To remove the pudding from the rectangular dish, cover the dish with cling wrap then flip it upside down.
