Do you ever wonder if store bought chicken broth or stock is bad or unhealthy for you? Do you ever hesitate to make food that requires chicken broth because of that? Well, wonder and hesitate no more. Just make your own at home! It is actually very simple and can be made months in advance (make sure to freeze it).

Add water to a large stockpot and bring to a boil. Wash whole chicken and remove any excess fat. Then place in pot. Wash scallions, cut in half, and place in the pot. Add garlic cloves, ginger and red onion to pot.

Over medium heat, simmer for 2 hours. Skim any murky or cloudy residue that rises to the top of the stock while simmering. When ready after cooking for 2 hours, remove all the ingredients from the stock by draining. Use immediately or freeze for up to 3 months.
