1 cup Cocoa Powder High quality preferred
3 large Eggs
1/2 cup Sugar
1 teaspoon Vanilla Extract
1 cup Cake Flour

Thick brownies with hint of nutty black sesame flavor. Not too sweet, on the healthier side with less sugar.

Preheat oven to 325 degrees. Line the 8" square baking pan with aluminum foil up the sides.

In a small bowl, mix the black sesame powder and honey until a paste forms. Set aside.

Add the butter and cocoa powder to a medium heatproof bowl. Set the bowl in a large pan of boiling water.

Water should not be overflowing into the bowl, so it may be easier to place a wire rack into the pan then place the bowl on top of the wire rack (as shown here). Stir the butter periodically until it is fully melted and the mixture is smooth. Remove the bowl from heat.

In a medium mixing bowl, whisk the eggs and sugar for about 5 minutes until fluffy. Set aside.

Add black sesame paste and vanilla extract to cocoa mixture and stir with a wooden spoon. Add the egg mixture 1/3 at a time, using a plastic spatula to fold and combine (do not whisk to combine). Add the cake flour 1/3 at a time, using a spatula to fold and combine (do not whisk to combine).

Spread the batter into the aluminum foil-lined baking pan. Bake it for about 25 minutes. The brownies are ready when you stick a toothpick into the center and it comes back out clean. Remove from heat and cool on a wire rack. Transfer to a cutting board and slice into smaller squares. Enjoy!
