Ingredients

1/2 cup Rice Flour
1/2 cup All Purpose Flour
1 teaspoon Chili Powder
1 teaspoon Sugar
1 teaspoon Salt
1 cup Water
6 cloves Garlic Minced
2 stalks Scallions Thinly sliced
1/8 Onion Minced
1 large Egg
1/4 pound Medium Shrimp Peeled and thinly sliced
1 cup Corn
Vegetable Oil For deep frying

Crispy shrimp and corn fritters coated in a tempura batter are very easy to make and the perfect snack for a large group! This serving makes 10 corn fritters.

In a large mixing bowl, combine rice flour, all purpose flour, chili powder, sugar and salt.

Add water and stir to combine, making sure there are no lumps. Then add garlic, scallion, onion and egg, mixing well to combine.

Finally add shrimp and corn to the batter. Mix well so the batter is evenly distributed or the fritters will have a disproportionate amount of shrimp or corn in each one.

Pour 1-inch of oil into a saucepan over medium high heat for deep frying. Once a drip of batter placed in the oil bubbles, the oil is ready.

Using a ladle, drop a ladleful of batter into the hot oil. Deep fry until the fritter is golden and crispy on both sides, about 2-3 minutes. It is unnecessary to flip over, but check periodically that it hasn't turned brown (golden brown is good, but darker brown will be overcooked). When ready, remove from oil and place on a paper towel-lined plate to drain. Repeat until all batter is used.

Serve hot and enjoy!
