2 1-pound Salmon Filet Skin on
2 thin slices Lemon

    Preheat oven to 325 degrees. Line a baking pan with aluminum foil and set aside.

    Make spice mixture by adding paprika, garlic powder, Szechuan peppercorns, chili powder, ground black peppercorn, and salt to a mortar and pestle. Grind spices together and blend well.

    Coat top side of salmon (side without skin) generously with spice mixture. Place salmon filets on baking pan with skin side down. Place lemon slices on top of filets and wrap aluminum foil around them loosely. Bake for 20 minutes then remove from heat and enjoy!

    Optional

    Optional - To give it a nice sear after baking, cook the filets on medium high heat in a frying pan for 30 seconds on each side. Be careful to not overcook. This step is not necessary as the salmon tastes great without searing.
