“Tong Sui” in literal translation from Chinese is sugar water. It is a popular dessert served at many Chinese restaurants and comes in different forms. This version with yam, tapioca pearls and coconut milk is a classic. Others include the red or green bean soup dessert, beancurd sweet soup dessert, and tang yuan (glutinous rice balls with sweet fillings). This recipe is very similar to the Taro Tapioca Pearl Dessert with Purple Yam, which uses purple yam and taro instead of only yam.

Boil the water.

Turn heat to medium and add the ginger, yam and rock sugar to the boiling water. Boil for 10 minutes or until the yam becomes soft.

Add the tapioca pearls and coconut milk. Cook for another 5-10 minutes or until the tapioca pearls become translucent. Stir frequently so the tapioca do not clump. Enjoy!
