1.5 pounds Beef Chuck
1.5 pounds Beef Bones
1 piece of Ginger cut in quarters lengthwise and charred
1 large Yellow Onion peeled, cut in quarters and charred
1/6 cup Fish Sauce
1 small piece Rock Sugar
2 Red Chili Peppers
5 Star Anise
4 teaspoons Coriander Seeds
3 Cinnamon Stick
4 pinches Salt
Noodles
1 pound Rice Vermicelli
Meats
1/2 pound London Broil sliced paper-thin across the grain
1/2 pound Sirloin Steak sliced paper-thin across the grain
1/2 pound Round Eye sliced paper-thin across the grain
Garnishes
3 Scallion sliced thinly
1 Lime Quartered
1 cup Bean Sprouts
1 cup Fresh Herbs Mint, cilantro, basil

Make the broth

In a large stockpot, bring 3 quarters water to a boil. In a separate pot, place the bones and beef chuck in boiling water for 5 minutes. Transfer the bones and beef chuck to the first pot of boiling water. Discard the water from the pot in which the meat cooked - this cleans the bones and beef and reduces the impurities that can cloud the broth. Reduce the heat to a simmer when the water returns to a boil. Add the charred onions and ginger, red chili peppers, fish sauce, rock sugar and 4 pinches of salt. Let the beef chuck cook in the simmering broth for 1.5 hours.

While the broth is simmering, prepare the spice bag. Add the star anise, cinnamon sticks and coriander seeds to a cheese cloth (or coffee filter paper tied with a cooking twine). Add the spice bag to the broth after it has simmered for 1.5 hours. Let the flavors from the spice bag simmer in the broth for 1/2 hour more.

While the broth is simmering, cut the meats into paper-thin strips about 1/2-inch wide. Set aside. Tip: Freeze the meat for 15 minutes prior to cutting.

In a small pot, add the rice vermicelli noodles to boiling water. Let it cook for 10 minutes or until it becomes soft. Set aside and drain the water. Add noodles and meats to a preheated serving bowl. Pour broth over meats (ensure the boiling broth covers the meat to cook it). Add garnishes as you like and enjoy!
